Grandmother's Light as a Feather Cheesecake
24 oz. of cottage cheese (some use sour cream)
3 eggs
1 stick of margarine (not butter)
1 cu sugar
1 T vanilla
2 T cornstarch
1 t salt
cinnamon
Use 2 pre-made pie shells
Use a food processer if you have one - if not do in batches in a blender. Combine and process until smooth. Pour into pie shells. Sprinkle cinnamon across the top. Bake at 425 degrees for 30 mins.
Top with fruit if desired.
