Who can share some yummy crockpot meals?


Just purchased a crockpot and look forward to the convenience of throwing stuff in, walking away, and returning 6 - 8 hours later to a ready made meal.

To those of you familiar with my non-meat stance, not to worry ... I'll just give my carnivorous portions to hubs.

Any good pot roast or stew recipes? He loves that stuff and I'm clueless. Chicken's on the list, too!

Bob's Crockpot Chili

1½ lbs ground chuck or ground round
4 cups water
1 12oz can beer
3 tsp ground oregano
3 tsp ground cumin
2 tsp paprika
2 tsp salt
1 tablespoon chili powder
1 small onion (finely chopped)
2 large or 4 small cloves garlic (minced)
1 can Rotel tomatoes/w chiles (Mexican style)

Place water & beer in crockpot & heat on high.
 In a large iron skillet, add 2 tablespoons cooking oil and brown meat, breaking up with metal spatula as it browns. Drain & add to crockpot. Add remaining ingredients (Drain Rotel Tomatoes before adding) and cook on high 1 hour. Turn control to low & cook 4 to 5 hours.


I almost forgot the paprika.

RED BEANS AND RICE

small bag of dried kidney beans, soaked overnight in cold water (or 4-6 cans of dark red kidney beans)
onion, chopped
bell pepper, chopped
sausage, sliced
ham bone
Tabasco sauce

Put it all in the crock pot with enough water to cover.
About an hour before you're going to serve it scoop out about a cup of the juice and make a roux and then dump that back in the pot and stir it up.
Serve over rice.

You can cook it on low or on high. I cook mine on high because the kids like red bean mush over rice. You can add or leave out any one or more of the ingredients (except the red beans) and pretty much get the same effect. My husband would be happy with nothing but the canned beans cooked all day and served over rice.

Kat, I've never tried this in a crock pot but don't know why it wouldn't work. When cooked in oven it makes a wonderful gravy to go with the meat and veggies.

Roast
1 can each of cream of mushroom, cream of celery and cream of onion soup
Potatos
Carrots
Onions
Celery stalks
Any other vegetable you care to add
Fresh ground pepper to taste
(Do not add salt as there is plenty in the canned soup.)

Mix soup with about 1 can of water - add more water if necessary. You want a thick consistency as juice from the meat will mix with soup while cooking and you want to end up with a cream-style consistency when finished. Pour over meat and veggies and cook.
