Easy Enchaladas





 1 39 oz can Wolf chili (or 2 19oz cans)
 1 large bell pepper (finely chopped)
 1 mediun onion (finely chopped)
 12 oz mild cheddar cheese (shreaded)
 12 corn tortillas



 Prepare bell pepper, onion, & cheese and place in separate small bowls.
 soak 3 tortillas at a time in a bowl of warm water to soften.
 Lay a tortilla flat on cutting board, spred 1 tablespoon of chili along one side along with a small amount of pepper, cheese & onion. Roll up from the ingredient side and place crossways in a 9" X 11" baking pan or dish.
 Repeat untill all tortillas are used. (4 will be placed in the pan longways)
 Spread remaining chili over enchaladas evenly & sprinkle remaining pepper, onion & cheese on top (leaving cheese for last)
 Bake in 350 oven 30 - 40 minutes, or untpll cheese is well melted.
 Serve with resturant style tortills chips & Jalapeo relesh.
