Re: Chili
Holy cow man! There's no beer in your chili!!!
That's a key ingredient.
I don't have a set recepie (that's part of the fun of making chili), but my core ingredients are:
2-3 lbs. ground beef
1 lb. ground pork
(if I'm feeling up to it I'll substitute a pound of the ground meat with cubed steak or pork)
1 large can (i forget the exact size) of crushed tomatoes
1 small can diced tomatos
4 small cans kidney beans (2 light 2 dark)
1 large onion
2-3 bottles of beer
A buttload of chili powder (yes, that's the official measurement)
From there it's a game of hot peppers, spices, garlic, and whatever else seems good a the time.

Re: Chili
Yeah I'm sure the beer adds a different flavor to things. I can't get it right now, but will at some point.

Re: Chili
Holy crap do you guys know how to make me hungry.
Chili to me is what you got in the fridge thrown together. I usually make a big batch of chili after I smoke meat. The smoked meat goes into the pot with everything else I can find including the ungodly hot homemade hot sauce that a friend made for me.
Another way to start a good chili is to get a cheap cut of pork like a boston butt (which is actually pork shoulder, go figure). Marinate it overnight in a good spicy marinade and then dump the marinade and pork into a crock pot before going to work. When you make it home have pulled pork sandwiches and dump your chili ingredients into the crock pot with what is left over. Next day have amazing chili!

Re: Chili
I once made chili with tomato paste. Italian chili.
Still, people had seconds so it wasn't that bad.
