Anime Origins
I was looking up Japanese demons and I came across this excellently informative site!
I will post some of the demon information right here, just for ease. To start...oh wait...
POSSIBLE SPOILERS
Ok, Ener from One Piece is derived directly from Raijin, a Chinese god who also exists in Japanese myth. He rides in the clouds and is surrounded by a ring of drums, which he plays to make thunder. You can also see him depicted in Pom Poko.
Now, Itachi in Naruto. I'm not that far, so I will simply post the description of his derivation and you who are farther can see if there are more correlations than what I know:
"The kamaitachi is a monster of weasel with keen sickles, which gashes its victim with an extreme swiftness. The word kama means "sickle," and itachi means "weasel."
It is said that three kamaitachi join a team and assult its victim. The first kamaitachi knocks down the victime, the second one gashes, and the third one heals the wound. The gash wounded by kamaitachi is deep, but bleeds very little. Kamaitachi is so swifty that none can see its true form.
Nowadays scientists think that kamaitachi is the vaccume bubble created in the air. When someone touches such a bubble, his skin and muscle break to form a deep gash."
I think it's the most funny that science is trying to explain this phenomenon as well. Personally, I think the scientific explanation is just as believeable/disbelieveable as the mythological one.
