Red Lobster Biscuits
2 cups of Bisquick (or similar mix)
2/3 cup of milk
1/2 cup of shredded sharp Cheddar cheese
1/4 cup of melted butter
1/2 teaspoon garlic powder
Combine first 3 ingredients in a large bowl and mix with a wooden spoon. Beat vigorously for 30 seconds. Drop by heaping tablespoonful onto ungreased cookie sheet. Bake at 450 degrees for 8-10 minutes. Combine melted butter with the garlic powder and brush over the biscuuits. Serve warm.
Goes well with Cygnus' shrimp recipes!

~Natchitoches Meat Pies~
Natchitoches, Louisiana, is the home of these famous pies, which have been popular there since
before the Civil War.
What's truly wonderful about these (aside from being delicious), is that you can freeze them after
preparation and serve them up later making for a great quick snack.
Ingredients:
1 lb. lean ground beef
1 lb. lean ground pork
1 medium onion, chopped
1 green bell pepper, chopped
1 bunch scallions, chopped
4 to 5 cloves garlic, minced
1 T. all-purpose flour
1 tsp. salt
1/2 tsp. pepper
1/4 to 1/2 tsp. ground red pepper
Pastry (recipe below)
Vegetable oil
Directions:
Combine meats in a heavy skillet; brown over medium heat, stirring until it crumbles.
Remove from skillet; drain, reserving drippings in skillet. Set aside. Sauté onion and next 3
ingredients in skillet until tender. Return meat to skillet; stir in flour and seasonings. Set aside.
Divide pastry into 4 portions. Roll out one portion to 1/8 inch thickness. Cut 5 circles using a 6-inch
saucer as a guide and re-rolling dough if necessary. Spoon about 1/4 cup meat mixture on one half
of each dough circle. Moisten edges with water. Fold dough over meat mixture, pressing edges to seal.
Crimp edges with a fork. Repeat procedure with remaining dough portions and meat mixture.
Pour oil to a depth of 3 inches into a Dutch oven; heat to 375ºF. Fry about 4 pies at a time until
browned, turning once. Drain on paper towels. Serve immediately. Makes 20 pies.
**Pastry**
8 C. all-purpose flour
2 tsp. baking powder
4 tsp. salt
1 C. shortening
2 eggs, beaten
2 1/4 C. milk
Combine flour, baking powder and salt in a large bowl; cut in shortening with a pastry blender until
mixture resembles coarse meal. Combine eggs and milk. Gradually add to flour mixture, stirring with
a fork until dry ingredients are moistened. Shape into a ball (pastry will be stiff).
NOTE: Pies may be frozen before cooking. Place pies in a single layer on baking sheets; cover and
freeze. Transfer from baking sheets to zip-top heavy-duty plastic bags, and return to freezer. To
serve, thaw pies overnight in refrigerator, and fry as directed above.

~AWESOME BBQ Sauce~
Once you try this, you'll never go back to store bought.
Ingredients:
1 cup ketchup
1/8 cup Tabasco sauce (optional)
1/3 cup Worcestershire sauce
1/4 cup brown sugar
1/4 cup honey
2 tablespoons margarine
1 tablespoon molasses
2 tablespoons lemon juice
1 tablespoon cider vinegar
Directions:
Mix all ingredients in non-stick pan. Simmer until sauce thickens, approximately 45 minutes. Recipe can easily be doubled.

~Sweet Potatoes Cygus Style :B~
Ingredients:
6 sweet potatoes baked and scooped out
1 to 2 sticks of butter softened
1 16 oz can of crushed pineapple, well drained
2 cups brown sugar
1 cup of chopped pecans
1 bag of miniature marshallows
Ground nutmeg, cinnamon, pumpkin pie spice & maple syrupto taste.
Directions:
Bake potatoes at 350 degrees for approximately an hour. Scoop out shells of sweet potatoes and mash. Add enough butter until they are creamy and smooth. Add the drained pineapple, brown sugar and chopped pecans - mix well. Add the following to taste - cinnamon, nutmeg, pumpkin pie spice & maple syrup. Place mixture in 8x12 casserole dish and sprinkle top with miniature marshmallow. Pop in 350 degree oven until marshmallows are lightly golden brown. Serve and enjoy ;)

~Baked Macaroni and Cheese~
Ingredients:
1 cup of elbow macaroni
8 ounces of sharp cheddar cheese, grated
2 eggs
3 tablespoons butter
about 1 & 1/2 cups of milk
1 teaspoon of salt
1/4 teaspoon of black pepper
Directions:
Cook macaroni in boiling, salted water for about 3 or 4 minutes, or halfway cooked (you don't want it mushy!) Drain in colander. Add 1 tablespoon of butter to keep macaroni from sticking. Place half of the macaroni in a buttered 9x9 baking dish, place half of the grated cheese on top, then dot with 1 tablespoon of butter. Add the rest of the macaroni, then cheese, and dot with the rest of the butter. Beat the eggs - add enough milk to the eggs to make the mixture amount to 2 cups of liquid. Add the salt and pepper to egg & milk and mix thoroughly. Pour mixture over macaroni & cheese. Bake in 350°F for about 45 minutes, or until lightly browned on top.

~Oyster Patties~
Ingredients:
4 dozen oysters with liquid
1/2 cup chopped canned mushrooms with liquid
1 onion, finely chopped
2 tablespoons butter, melted
1 tablespoon flour
1/2 tsp. salt
Salt and pepper to taste
1/8 teaspoon cayenne
2 tablespoons minced parsley
1/4 teaspoon lemon juice
36 miniature patty shells
Directions:
Cook oysters in their liquid by bringing to a boil; then simmer for 10 minutes. Saute' onion in butter; blend in flour until smooth. Add mushrooms and liquid, salt, pepper, cayenne, parsley, lemon juice and oysters. Cook for 5 minutes; spoon into patty shells; bake in 425 degree oven for 15 minutes.

~Cajun Shrimp Balls~
Ingredients:
2 T. butter or margarine
2 T. chopped parsley
2 T. chopped scallions
2 T. flour
1/2 C. milk
1/2 tsp. salt
1/4 tsp. Tabasco
1/2 lb. shrimp, cooked, cleaned and finely chopped
2 eggs
2 C. fine dry bread crumbs
Oil or shortening for deep frying
Directions:
In a medium saucepan melt butter. Add parsley and scallions, cook for 1 minute. Blend in flour. Stir in milk, salt and Tabasco. Cook, stirring constantly, until mixture thickens and comes to a boil. Remove from heat and stir in shrimp. Shape into balls using 1 tablespoon mixture per ball. Beat eggs. Dip balls in bread crumbs, then eggs, then bread crumbs again. Chill for 30 minutes. Heat oil to 350ºF to half fill a large saucepan. Fry 4 balls at a time until brown, 2 to 3 minutes. Yields 24 shrimp balls.

~Dump Cake~
Ingredients:
1 jar of Maraschino cherries, chopped
1 20 ounce can of crushed pineapple, drained
1 box of plain yellow cake mix (not the kind with pudding!)
2 sticks of butter, sliced
1/2 cup of chopped pecans
Directions:
Butter a 9x9 glass pan. Layer ingredients in pan in the following order: cherries, pineapple, cake mix (DRY), layer the butter slices so that it entirely coveres the cake mix, and then add the chopped pecans. Bake at 350 for approximately 45 minutes, or until a toothpick comes out clean. **WARNING** this one is VERY rich and highly addictive! Makes about 6-8 servings - or, one if you really like it.

~Carrot Cake~
Ingredients:
2 cups of sugar
1 & 1/2 cups of cooking oil
4 eggs
2 cups of sifted flour
2 teaspoons of cinnamon
2 teaspoons of baking soda
2 teaspoons of baking powder
1 teaspoon of salt
3 cups of grated carrots
1/2 cup of chopped pecans
Directions:
Beat sugar and oil until blended. Add eggs one at a time, beating after each addition. Sift dry ingredients into sugar-oil mixture. Add carrots and pecans; mix well. Pour batter into 3 greased 9-inch cake pans. Bake in 325° F oven for 45 minutes. Cool. Frost with Cream Cheese Frosting.
Cream Cheese Frosting
1 box (1 pound) of sifted confectioners sugar
1 package (8 ounces) of cream cheese
1/4 cup of butter, softened
2 teaspoons of vanilla extract
Combine ingredients and beat until mixture is of spreading consistency. This filling will appear to be stiff at first, but after thorough mixing, it will soften enough to spread over cake.
