That's the first thing that popped into my head, when I read the original post with the question.. That would have been awesome.
Another thing I would have liked to see is the killing of Father Lilliman.. I wish they would have done it in the movie just like in the GN, including the quote from "Sympathy for the Devil".

I wouldn't mind seeing Hugo whip out his piano skills (faking or not)
Also I wish they would have kept the relationship between Delia Suridge and Detective Finch alive... would have made the bond between the two stronger..

"Aye, Atque, Vale...give me a viking funeral" bit when V is dying.
"Land of Do as You Please" reading.
Says, "I LOVE YOU EVEY" when he is dying instead of the "I fell in love with you Evey". I get cranky over that one.
Lose Sutler, keep Voice of Fate. Just to have Hurt as the voice of fate would have been alright by me. I just didn't get into the Sutler bit (that's probably because I've read the GN before the film)

Do you mean you didn't like their romantic relationship in the movie? Because in the GN he says he loves her, yes, and she even kisses him too after being released from her prision but i don't think either actions are derived from the romantic kind of love that we see in the movie, it's more like brotherly love, or teacher-apprentice love or something... didn't you think?
"I fell in love with you" is so much more applied to a lover, where as "i love you" can be said to practically anyone.

Yes, i would have liked that too, although i think that goes better with the GN-Evey than the movie-evey, in the GN she's so much more childish, and that's why i think their love is not man-woman love rather than mentor-apprentice love (in the GN).
This last point is mainly why i can accept the changes done in the movie. Movie-Evey seems much more mature, still afraid yes, but to have him read for her and do the magic tricks as done in the GN would have made it more difficult to build a romantic kind of love between them. But that's my opinion, i read the GN after seeing the movie.
I would have liked to see it when, in the GN, V takes her to "meet his lover", i would have just loved to hear Hugo say "He'll rue his promiscuity, the rogue who stole my only love, when he's informed how many years it is...
...since first I bedded his!"

I read the GN/Novelisation after watching the movie and I'm glad that Evey wasnt the wanna-be-prostitute as in the GN as well. I would have liked it if more of Finch's relationship with Delia was exposed, his lsd experience, and the history of his family.
The ending was better with V being shot up by Creedy and his henchmen instead of by Finch. I'm also glad that V tumbles and dies in Evey's arms instead of tumbling down the stairs.
I'd stick with the "I fell in love with you..." rather the "I love you" far more romantic definitely made me wanna
I had to reread the whole Conrad plot in the GN didnt quite get where that would have fit in the movie.
